1st Course

PAN SEARED SCALLOP WITH CHARDONNAY HOLLANDAISE, WITH PICKLED WATERMELON RADISH AND TROUT ROE
2016 Landmark Overlook Chardonnay – Sonoma County, California
Pale lemon yellow, with aromas of ripe lemon, yellow apple, pineapple and toasted oak. Balanced and layered on the entry with ripe lemon, green apple and grilled ripe pineapple with attractive smoky oak and vanilla barrel notes. The crisp mid-palate shows savory chamomile flower and a pleasant mineral texture with sustained fruit that continues through the clean, textured finish.

2nd Course

BRAISED PARTRIDGE OVER LOUISIANA RED BEANS AND RICE
2016 Justin Cabernet Sauvignon – Paso Robles, California
Dry, moderate plus bodied, with ripe red and black cherry, and blackcurrant fruit joined by vanilla and cinnamon spice notes on the entry. The mid-palate is fresh with sustained ripe fruit, toasty oak notes, and softly textured tannins. The finish is moderately long with notes of cherry candy and blackcurrant fruit matched with subtle classic Cabernet savory elements.

3rd Course

SMOKED ANDOUILLE SAUSAGE WITH BELL PEPPER GRITS AND FRIED MUSTARD GREENS
2015 Justin Justification – Paso Robles, California
Soft red-cherry aromas meet with dark spice on the nose of this 52% Cabernet Franc and 48% Merlot blend. Framed by firm, sticky tannins, the medium-bodied palate shows flavors of red currant, cedar and oak.

4th Course

WAGYU FLANK STEAK WITH STILTON CREAM SAUCE, RICE PILAF AND ROASTED VEGETABLES
2015 Justin Isosceles – Paso Robles, California
Dry and full bodied, layered with red and black cherry, cassis and complex baking spice on the entry. Sweet tobacco and classic savory pencil-like notes of cedar and graphite with a little cocoa emerge on the crisp mid-palate with firm chewy tannins lasting into a long, complex finish that shows a parade of fruit and spice balanced with constantly evolving textures and savory notes.

Dessert

CHOCOLATE MOLTEN LAVA CAKE WITH BARB RITTER’S SALTED CARAMEL CENTER
Dows 10 Year Tawny Port – Portugal
“10 Years” indicates and average age- this Aged Tawny Port is a blend of older wines, which offer complexity, and younger wines, which bring fresh fruit flavors and vibrancy. During their long maturing period in oak casks, aged tawnies undergo subtle color changes: the deep red hue which characterizes Port’s youth gradually gives way to a paler, reddish, amber color. Dow’s is known for its characteristically drier house style. This 10 Year has a full, nutty bouquet with citrus and vanilla accents on the palate and a soft lingering finish.
